Induction Stovetop Cookware If you have now, or plan to purchase, an induction stovetop then this is the set for you. When thinking about whether or not you will someday own an induction stovetop it helps to know a little about them. Induction stovetops can be portable making them ideal for locations such as RV’s, dorms and retirement communities as well as at home for portable home buffets, while entertaining on the patio, or for extra cooking areas during the busy holiday cooking times. Why can an induction stovetop be safely be used as a portable cooking surface? Because with induction cooking, the cooking surface does not get hot. Induction stovetops use a magnetic field to heat up the cooking pan, which then heats the contents of the pan, while the stovetop itself stays relatively cool. With gas or conventional electric cookers (including halogen), the energy is first converted to heat and only then directed to the cooking pan. Because its energy is transferred only to relatively massive magnetic materials, you can turn an induction element to "maximum" and place your hand flat over it with no consequences whatever--it will not roast your non-ferrous hand! (Nor any rings or bracelets) The units all have sensors that detect how much ferrous metal is in the area that the magnetic field would occupy. If it isn't at least as much as a small pot, they don't turn on. And, while an element is actually working, all of its energy goes into the metal cooking pan right over it--there is none left "floating around" to heat up anything else. This makes it the fastest cooking method yet it’s just as controllable as gas. But, you can only use certain types of cookware – you need cookware that will attract a magnet. To determine if a particular piece of cookware is induction-ready all you need is a simple magnet of any kind. If the magnet readily clings to the base of the cookware piece, that piece is induction-ready; if the magnet does not cling, or clings only very weakly, the piece is not.
